These Chocolate Peppermint Brownies are delicious. This quick and simple one bowl recipe is the perfect treat this festive season. Top with buttercream and crushed candy canes or keep it simple and lightly top with confectioners sugar.
Chocolate and peppermint are such a classic combination. A delicious combination. And, in my opinion, such a Christmas-y combination. And these Chocolate Peppermint Brownies are delicious. They come together super quickly and the brownie itself comes together all in one bowl.
The actual brownie is lower in added sugar than a traditional brownie as I use banana as a sweetener in addition to 1/3 cup of brown sugar and 1/3 cup of chocolate chips. But the fact the brownie is slathered with a delicious buttercream and sprinkled with crushed candy canes sort of reduces the health factor. Oops. Oh well. ‘Tis the season right?!
To Make the Chocolate Peppermint Brownie You Will Need
- an overripe banana
- brown sugar
- butter
- cocoa
- eggs
- vanilla extract
- peppermint extract
- wholemeal flour
- baking powder
- chocolate chips
For the Icing
- icing sugar (confectioners sugar)
- cocoa
- milk
- candy canes
How to Make the Chocolate Peppermint Brownies
In a medium size bowl add in a mashed banana, brown sugar, butter, eggs, vanilla extract and peppermint extract.
Next, whisk the mixture together until well combined and the chocolate mix is silky and smooth.
Into the same bowl add in the flour, baking powder and chocolate chips then fold in until the mixture is well combined.
Then, spoon the mixture into a prepared 18cm square brownie pan and bake for around 12 minutes until just cooked through and the top bounces back when softly pressed.
After the brownie has cooked, cool completely before removing from the pan. Optionally (and most deliciously) ice the brownie with chocolate icing and sprinkle with roughly crushed candy canes. Try and ice and decorate as close to serving as possible. Cut the brownie into 16 squares and enjoy.
Substitutions
You can use maple syrup instead of brown sugar if that is your preference. And though I have not tested you could use extra virgin olive oil instead of butter however they may not have that rich brownie taste.
You could use a plain white flour if you don’t have wholemeal.
