- Bacon Cherry Tomato and Chives
- Sweet Corn and Spring Onion

These egg muffins are full of flavour and goodness and they come together so quickly. They are perfect for breakfast, lunch or dinner. And by making them in a muffin tin they are perfectly portioned and ready to just grab and go for meals on the run!
Panasonic 3-in-1 Combination Microwave
We renovated our kitchen last year and one of the appliances I was desperate to replace was our microwave. It was old, inefficient and, actually, was not consistently working. So when I had the opportunity to test out the Panasonic 3-in-1 Combination Microwave I literally jumped for joy.
This microwave is all that. Plus a bag of chips. It’s sooo much more than a microwave. This genius machine also features a convection oven and grill too. So it is perfect not only for the traditional functions of a microwave but you can steam, grill, bake, and reheat pizza like a pro #HardCrustIsAMust.
The microwave itself is a generous size for families at 34L but it’s a space saver and sleek and stylish to boot.
Favourite features of the combi microwave oven
There are so many intelligent and thoughtful features in this microwave. From child lock functionality – for those little fingers who just love to press buttons – to auto sensor programs.
I know it sounds a little silly but one of my favourite features in a microwave is the defrost setting. I have mentioned before how much I love to bulk bake and freeze but I also freeze our bread to keep it fresher. So a consistent defrost setting on a microwave is a must for me.
I have also been loving having an extra oven in the kitchen. Perfect for entertaining or bigger families or even just when you are cooking that Sunday roast and have a hankering for some freshly baked cookies too!
The microwave also boasts a convenient pre-programmed junior menu with everything from pasta bakes to fresh vegetable fries. These healthy recipes are designed with the pickiest little eaters in mind and I cannot wait to get my kids helping make these.
So where can you pick up one of these beauties, I hear you ask?! The Panasonic NN-CD87 combination microwave oven is available now from leading consumer electronic stores.
Microwave Muffin Tin Frittatas
Frittatas are an egg based savoury meal that is effectively like a baked omelette (though this may offend traditionalist foodies!). I love the convenience of making frittatas in a good quality non-stick (this is super important) muffin tin so they are perfectly portioned.
Frittatas are a perfect gluten free non sandwich lunchbox idea or even for a quick delicious breakfast that can be made ahead and eaten on the go. These are also substantial enough that you can serve them for dinner with a lovely fresh side salad.
They are really versatile with what you can add into them too. So you can cater and alter the frittatas to suit your family. And by baking in a muffin tin you can cater for everyone – at once!
I have tested three flavour variations for these egg muffins and they are just perfect to make in your Panasonic 3-in-1 Combination Microwave. The muffin tin frittatas have been made with the microwave setting and the convection oven setting.

To Make the Microwave Muffin Tin Frittatas
In a large bowl add the eggs.
Then whisk the eggs until they are combined.
Next, add in your fillings into a well prepared 6 cup jumbo muffin tin. It is really important to ensure the muffin tin is non stick and greased well to ensure that the egg muffins do not stick, especially for the flavours that contain the cheddar cheese. You may also wish to use a silicone muffin tray.
Then evenly distribute the egg mixture between the muffin cups and season with salt and pepper if desired.
Bake for around 14 minutes until the egg mixture is set and lightly golden. Stand the egg muffins for 5 minutes to allow too cool. This will also allow the egg muffins to be removed more easily from the tin. The muffins should pull from the sides of the muffin tin when they have cooled sufficiently.
Storing the Muffin Tin Frittatas
These egg muffins store well in the fridge for around two to three days. You can also freeze these too and they will last for two to three months in the freezer. Defrost overnight in the fridge.
Reheating the Muffin Tin Frittatas
While you can eat these cold, if you prefer you can reheat the egg muffins in the microwave at 1000w for around 1.5-2.5 minutes depending on the filling. Make sure the frittata is piping hot.
You may also love these Vegetable Frittatas or for other non sandwich lunchbox ideas you might love these Pumpkin Fritters or these fun Pizza Topped English Muffins that can be grilled easily in the Panasonic 3-in-1 combination oven.
