Ok so I feel a little silly calling this a recipe. I mean we all know how to make a toasted sandwich, right? Well, what you may not know is this delicious veggie combination. And we sure do love these Mushroom Spinach Toasted Sandwiches. Perfect for busy weeknights or a quick and delicious lunch, these toasties hit the spot.
We have been having these Mushroom and Spinach Toasted Sandwiches a bit recently. Miss Three (who adores mushrooms) especially loves these. They are great with soup and they really fill out the meal. These toasties are also just as great on their own and I love these Mushroom and Spinach Toasted Sandwiches for a veggie packed lunch. And as you know, toasted sandwiches are so quick to pull together. These are also perfect for mum lunches and a lot of offices have facilities to make these at work so you can always prepare them in advance and toast them at work for a warming and delicious lunch.
You can either quickly sauté the mushrooms in a frypan or even in the toasted sandwich machine (which actually works quite well) before assembling or just add them in raw. I preferred the flavour when they were sautéed. You also don’t need to include them at all. Mr 7 does not really enjoy the mushrooms in these so I just leave them out for him.
I used Swiss cheese with these toasted sandwiches but really you can use any cheese. I just really loved the flavour of the Swiss cheese in them and think they pimp them up a little. Also this flavour combination makes delicious quesadillas so instead of making traditional toasted sandwiches why not make them with tortillas instead of the sourdough.

These delicious Mushroom Spinach Toasties are quick and simple and make a fantastic busy weeknight dinner or nourishing home lunch.
Ingredients
- 8 slices of sour dough
- 1 tbsp butter
- 8 slices of Swiss cheese
- 4 large mushrooms sliced (sautéed or fresh)
- 16 baby spinach leaves
- 1/4 large red onion thinly sliced
- 1 tsp fresh or dried thyme
- cracked black pepper (optional)
Instructions
- Butter the sourdough and stack in pairs, buttered side in
- Add cheese, mushrooms, spinach, red onion, thyme and pepper
- Toast in toasted sandwich machine for three minutes or until golden and cheese has melted
Notes
To sauté the mushrooms, cook in a pan over medium high heat with a little butter for two-three minutes.
