The Best Ever Healthier Monster Cookies

These delicious Healthier Monster Cookies are a fantastic snack when you need your sweet fix. Full of flavour, these are a  healthier take on the Monster Cookie classic. They are made with oats, whole wheat flour and the addition of zucchini. 

Ah Monster Cookies. I am so glad I discovered you. Have you tried these cookies before? They are good. Or to re-state that. They are GOOD 🙌. And I am sure you will love my version. These cookies are the perfect blend of chocolate and peanut butter and with my twist of whole wheat flour, oats and zucchini these are Healthier Monster Cookies.

The kids adore these Healthier Monster Cookies. And I am definitely not short of helpers when it comes to baking these. They have especially been loving learning to use the electric mixer. It’s really important to me that my kids learn how to bake and cook and finding something that they love to eat definitely makes it easier to engage them in the activity!

No hidden veg here! Getting the kids to bake with vegetables reduces the sneak factor and normalises the use of vegetables in baking.

I love getting the kids to help me make these Healthier Monster Cookies, especially as they contain zucchini. That way it normalises the use of zucchini in sweet baking and I don’t feel like I am hiding vegetables. Rather I am just boosting the nutrient content in the baking.

We gently push 5 smarties on top of each Monster Cookie, counting them as we go.

The only draw back for us with these Healthier Monster Cookies is that I cannot pack them for school lunches as they contain peanut butter. You could however just leave this out or substitute for a seed butter should you want these for lunchboxes.

Description

These delicious Healthier Monster Cookies are a fantastic snack when you need your sweet fix. Full of flavour, these are a  healthier take on the Monster Cookie classic. They are made with oats, whole wheat flour and the addition of zucchini.


Ingredients

Scale
  • 100g butter softened
  • 1/3 cup brown sugar
  • 1 egg
  • 1/4 cup crunchy peanut butter (or seed butter)
  • 1 tsp vanilla extract
  • 100g (1 small) grated zucchini
  • 1/3 cup chocolate chips
  • 1 1/2 cups quick oats
  • 1/2 cup plain whole meal flour
  • 1/2 tsp baking powder
  • 1/4 cup mini smarties or mini m & ms

Instructions

  1. Preheat your oven to 180c and line a baking tray with baking paper
  2. In a large bowl, cream the sugar and butter with an electric mixer
  3. Once creamed, add the egg, peanut butter and vanilla and beat until well combined 
  4. Add the grated zucchini and chocolate chips and stir through until evenly mixed then add the oats, baking powder and flour and mix together to form a dough
  5. Roll tablespoon sized portions of the dough into balls and place separately on the tray
  6. Flatten the balls with your fingers and top each cookie with 5 mini smarties or mini m & ms pressing them down gently as you go 
  7. Bake in the oven for around 12-15 minutes or until lightly golden
  8. Rest on a baking tray for a five minutes before cooling on a wire rack

    Can you pls recommend a seed butter? I’ve searched the stores, health food etc and impossible

    • You could make your own – sunflower seed butter is a good substitute. But you can just omit which would be easiest. Thanks, Bernadette x

  4. Would it be okay to use normal butter in these? I can’t any seed butter 😥

    • The recipe calls for butter and peanut butter (or seed butter if you have peanut allergies). If you don’t want to use peanut butter or seed butters then you can just omit this ingredient. Thanks Bernadette

  5. I didn’t want to assume but should I wring out the zucchini? Most directions say so but I wasn’t sure if this recipe benefits from the liquid. Thank you!

    • I don’t find I need to and as long as it’s the same weight as the recipe you shouldn’t need to. If you’d prefer to though then you can. Bernadette x

    • Personally I have never used cucumber in baking and have not heard of it being a substitute for zucchini. You can just omit the zucchini if you do not have any. Thanks, Bernadette x
