Description
These delicious nut free Zucchini Chocolate Chip Cookies are fantastic in lunchboxes. Lower in sugar and made with lots of oats and wholemeal flour this will be a lunchtime favourite.

- 100g butter
- 1/3 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 150g (1 medium) zucchini grated
- 1/3 cup chocolate chips
- 1 1/2 cups quick oats
- 1/2 cup wholemeal flour
- 1/2 tsp baking powder
Instructions
- Preheat your oven to 180c and line a baking tray
- Cream the sugar and butter with an electric mixer
- Add the egg and vanilla and beat until mixed through
- Add the zucchini and chocolate chips and stir through until combined before adding in the oats, baking powder and flour
- Roll tablespoon sized portions of dough into balls and place separately on the tray
- Flatten the balls with your fingers
- Bake in the oven for around 12-15 minutes or until lightly golden
- Rest on a baking tray for a five minutes before cooling on a wire rack
