These delicious nut free Zucchini Chocolate Chip Cookies are fantastic in lunchboxes. Lower in sugar and made with lots of oats and wholemeal flour this will be a lunchtime favourite.


  • 100g butter
  • 1/3 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 150g (1 medium) zucchini grated
  • 1/3 cup chocolate chips
  • 1 1/2 cups quick oats
  • 1/2 cup wholemeal flour
  • 1/2 tsp baking powder


  1. Preheat your oven to 180c and line a baking tray
  2. Cream the sugar and butter with an electric mixer
  3. Add the egg and vanilla and beat until mixed through
  4. Add the zucchini and chocolate chips and stir through until combined before adding in the oats, baking powder and flour
  5. Roll tablespoon sized portions of dough into balls and place separately on the tray
  6. Flatten the balls with your fingers
  7. Bake in the oven for around 12-15 minutes or until lightly golden
  8. Rest on a baking tray for a five minutes before cooling on a wire rack
