Description
These light Zucchini and Pea Fritters are full of flavour and are a fantastic quick and easy lunch or snack.
Ingredients

- 1 medium zucchini (100g) grated with liquid squeezed out (see note)
- 1 cup of baby peas
- 2 eggs
- 1/3 cup self raising flour
- 2 spring onions chopped finely
- 1 tbsp finely chopped mint
- 40g feta
- juice of 1/4 of a lemon
- salt and pepper
- 1 tbsp olive oil
Instructions
- In a large bowl whisk together the flour and eggs until smooth
- Add in the remaining ingredients and mix well to combine
- Heat a frypan over medium to low heat
- In batches, cook spoonfuls of the batter for two to three minutes a side or until golden brown
- Cool slightly then serve with lemon wedges
Notes
To squeeze the liquid out of the zucchini, grate the zucchini onto a clean dry tea towel and then roll tightly and squeeze over the sink until as much liquid is removed as possible.
