Zucchini Pea Fritters – Full of Veg and Kid Approved

Description

These light Zucchini and Pea Fritters are full of flavour and are a fantastic quick and easy lunch or snack.


Ingredients

Scale
  • 1 medium zucchini (100g) grated with liquid squeezed out (see note)
  • 1 cup of baby peas
  • 2 eggs
  • 1/3 cup self raising flour
  • 2 spring onions chopped finely
  • 1 tbsp finely chopped mint
  • 40g feta
  • juice of 1/4 of a lemon
  • salt and pepper
  • 1 tbsp olive oil

Instructions

  1. In a large bowl whisk together the flour and eggs until smooth
  2. Add in the remaining ingredients and mix well to combine
  3. Heat a frypan over medium to low heat
  4. In batches, cook spoonfuls of the batter for two to three minutes a side or until golden brown
  5. Cool slightly then serve with lemon wedges

Notes

To squeeze the liquid out of the zucchini, grate the zucchini onto a clean dry tea towel and then roll tightly and squeeze over the sink until as much liquid is removed as possible.
