Description
Lemon Yogurt Mini Loaves are delicious and tangy. Great sliced into portions for lunchboxes and pretty enough to hold their own as dessert, drizzled in yogurt and topped with fresh berries. These Lemon Yogurt Mini Loaves are a great way to challenge your kid’s tastebuds and offer new flavours.
Ingredients

- 1 cup greek yogurt
- 1/2 cup olive oil (low flavoured, extra virgin)
- 2 eggs
- juice of two lemons
- finely grated zest of one lemon
- 1/2 cup honey
- 2 cups self raising flour
- 1/2 cup desiccated coconut
Instructions
- Preheat oven to 180c and line and grease your mini loaf tins (or muffin tins)
- Whisk together the wet ingredients and the lemon zest
- Add the flour and coconut and gently mix together until just combined, taking care not to overmix the batter
- Spoon evenly into the mini loaf tins and bake for around 18 minutes or until a skewer inserted into the centre of the loaf comes out clean
- Remove from the oven and leave in the loaf tin for 5 minutes before transferring to cool on a while rack.
Notes
- If you do not have mini loaf tins, use a muffin tin to make these. The recipe will make around 12 muffins.
