Description
These simple and delicious Corn Fritters come together so quickly and taste great all in one bowl. They are slightly sweet flavour with pops of flavour from the corn and are light and fluffy.
Ingredients

- 2 eggs
- 1/3 cup self raising flour
- 1/2 cup grated cheddar cheese
- 1/3 cup creamed corn
- 1/3 cup cooked sweet corn kernels (see note)
- 2 spring onions chopped finely
- 1 tbsp finely chopped chives
- salt and pepper
- 1 tbsp olive oil
Instructions
- In a large bowl whisk together the flour and eggs until smooth
- Add in the remaining ingredients and mix well to combine
- Heat a frypan over medium to low heat
- In batches, cook spoonfuls of the batter for two to three minutes a side or until golden brown
- Cool slightly then serve
Notes
I quickly cook corn on the cob for this recipe by boiling a prepared cob for one-two minutes. I then cool under running water and slice off the kernels.
