These low sugar flavoursome Carrot Oat Cookies are perfect for school lunches or snacks.
Ingredients

- 100g butter softened
- 1/3 cup brown sugar
- 1 egg
- 1 tsp cinnamon
- 150g peeled and grated carrots (around 2 medium sized carrots)
- 1 1/2 cups self raising wholemeal flour
- 1 cup rolled oats
Instructions
- Preheat your oven to 180c and line a baking tray
- Cream the sugar and butter and cinnamon with an electric mixer
- Add the egg and beat until mixed through
- Add the carrots, oats and flour and stir through until combined
- Roll tablespoon sized portions of dough into balls and place separately on the tray
- Flatten the balls with a fork
- Bake in the oven until lightly golden
- Rest on a baking tray for a few minutes before cooling on a wire rack
