Banana Chocolate Chip Muffins

Ingredients

  • 2 over-ripe bananas
  • 1 cup ricotta
  • 2 eggs
  • 1/2 cup neutral oil (I use low flavour extra virgin olive oil)
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips
  • 2 cups self raising wholemeal flour

Instructions

  1. Grease and line your muffin tin and preheat the oven to 180c
  2. Whisk together the wet ingredients in a large bowl 
  3. Stir through the chocolate chips then gently fold through the flour until just combined, taking care not to over-mix
  4. Bake for around 15 minutes or until a skewer inserted into the centre of the muffin comes out clean
  5. Cool for a few moments before removing from the tin and cooling on a wire rack
