Apple Cinnamon Muffins

Ingredients

Scale
  • 2 cups self raising flour
  • 2 large apples peeled and grated
  • 1/3 cup rolled oats
  • 1/3 cup desiccated coconut
  • 2 tsp cinnamon
  • 1 cup of coconut milk
  • 1/2 cup of coconut oil melted or olive oil
  • 1/3 cup of maple syrup
  • 1 tbsp vanilla extract
  • 1 Chia Egg Substitute (see note)

Instructions

  1. Preheat your oven to 180c, grease a muffin tin and make the Chia Egg Substitute
  2. In a large mixing bowl add all the dry ingredients and stir until combined
  3. Add the remaining ingredients and mix until just combined taking care not to overmix
  4. spoon into a greased muffin tin and bake for around 12 minutes or until the muffin springs back when lightly pressed and an inserted skewer comes out clean.
  5. Cool in the muffin tin for 5 minutes before turning out onto a baking rack to cool

Notes

To make the Chia Egg Substitute, take one tablespoon of Chia Seeds and mix with two tablespoons and one teaspoon of water in a small dish. Stir the mixture and leave for around 5 minutes until the mixture turns gelatinous.

A Chia Egg Replacement is easy to make and a great substitute for egg in a lot of baking recipes.
